Mutton Masala (मटण मसाला) is an Indian spice blend for mutton curry and gravy, slow-cooked mutton biryani, grilled, barbecued or roasted mutton, kheema and minced meat dishes, and hearty mutton stews and soups. It sits in the "Special Blends" range and doubles as a mutton marinade. The blend uses traditional spices such as coriander, cumin, cloves, bay leaves and cardamom, ground to keep the natural oils of non-oil-extracted spices; the label lists chilli, turmeric, coriander, cumin, black cardamom, cinnamon and sesame. It gives a full-bodied, aromatic flavour with warm spices and balanced heat, and is free from preservatives, fillers and artificial colours or additives. The white and red pouch carries a green VEG mark and FSSAI number 11521998000267, and it is a product of India. For a traditional curry, 500g mutton is marinated with 1 tablespoon of masala and 1 cup yogurt for at least 30 minutes, then cooked with onions, ginger-garlic paste, tomatoes and another tablespoon of masala, and simmered for 20-30 minutes until tender. Slow-cooking on low heat or a teaspoon of ghee deepens the flavour. Stored airtight in a cool, dry place away from sunlight, it keeps for up to 12 months.
