Kanda Lasun Masala (कांदा लसूण मसाला) is an onion (kanda) and garlic (lasun) spice blend, a staple of Maharashtrian cooking, for curries, stir-fries, marinades, chutneys, fried rice and pulao. It combines finely ground onions and garlic with an array of spices for a balanced, hearty flavour in both vegetarian and non-vegetarian dishes. The spices are non-oil-extracted so their essential oils and flavour stay intact, and the blend is 100% natural, free from artificial additives, preservatives and fillers. The label lists "Coriander, Cumin, Asafoetida, Stone flower, Onion, Garlic etc." and the pack is marked VEG. For a vegetable curry, 2-3 tablespoons go into 2 cups of mixed vegetables such as bell peppers, carrots and green beans, cooked with onion, ginger-garlic paste and tomatoes and simmered for 15-20 minutes. Dry-roasting the masala for a minute or two first intensifies the aroma. Stored airtight in a cool, dry place away from direct sunlight, it stays fresh for up to 4 months; the pack reads best before 4 months and asks to refrigerate after opening. It comes in a white stand-up pouch with a deep red base, printed "Product Of India".
