Hyderabadi Biryani Masala (also spelled Briyani; हैदराबादी बिर्याणी मसाला) is an aromatic spice blend for traditional Hyderabadi biryani with chicken, mutton or vegetables. It also lifts pulao, masala rice and other rice dishes, adds depth to meat and vegetable marinades, and brings a Hyderabadi note to curries and stews, especially tomato or yogurt-based gravies. It suits both vegetarian and non-vegetarian cooking. Handpicked spices such as cinnamon, cardamom, star anise and black pepper are blended using traditional techniques. The spices are non-oil-extracted to keep them fresh and flavourful, and the masala is free from artificial preservatives, fillers, colours and additives. For Hyderabadi chicken biryani, the chicken is marinated with yogurt, ginger-garlic paste and the masala, layered with part-cooked basmati rice and cooked on dum; a few drops of rose water or kewra water over the rice before steaming add fragrance. Stored airtight in a cool, dry place away from direct sunlight, it stays fresh for up to 12 months.
