Goan Recheado Masala (गोवन रिचाडो मसाला) is a tangy, mildly spicy Goan spice blend, traditionally used to marinate and stuff seafood such as fish and prawns. It suits stuffed pomfret, mackerel or any firm-fleshed fish, grilled prawns and Goan fish fry. It also gives a Goan twist to vegetable stir-fries and grilled paneer, and mixed with mayo or yogurt it makes a zesty sandwich or wrap spread. The blend combines red chilies, vinegar, garlic and warm spices such as cinnamon, cloves and cumin; the pack label lists Chilli, Turmeric, Cinnamon, Ginger, Garlic, Vinegar etc. Made from non-oil-extracted spices that keep their natural essential oils, it delivers tanginess from vinegar and a gentle heat, and it is free from artificial preservatives, fillers and additives. For stuffed pomfret, the masala is mixed with a little vinegar into a thick paste, rubbed into the slits, rested for at least 30 minutes and pan-fried for 4-5 minutes on each side. Stored airtight in a cool, dry place away from sunlight, it keeps for up to 4 months; the pack reads Best Before 6 Months and asks to refrigerate after opening. Per 100 g it has protein 14.5 g, total fat 18.0 g, carbohydrate 45.0 g, energy 400.0 Kcal and total sugars 4.0 g. It comes in a stand-up pouch with a green VEG mark, marked Product Of India, in packs of 100 gms, 250 gms and 500 gms (listed weights 0.05 kg, 0.1 kg and 0.2 kg). Catalogue code: SNMGOAN04
