Chicken Masala is a spice blend for Indian chicken dishes, from classic curry and tandoori marinades to chicken tikka masala, kebabs and biryani, in packs of 100 gms, 250 gms and 500 gms (the 250 gms pack has a listed weight of 0.2 kg). The blend balances coriander, cumin, black pepper, cinnamon and chillies; the label lists Chilli, Coriander, Cumin, Black pepper, Cinnamon, Green Cardamom etc. Each non-oil-extracted spice is roasted to keep its essential oils, so the masala is potent and less of it gives the same rich taste. It is 100% natural and free of preservatives, artificial additives and fillers. Use it for grilled, roasted or baked chicken, stir-fries, kebab marinades with yogurt and lemon juice, and chicken rice. A chicken curry takes 2 tablespoons for 500g of chicken cooked with yogurt, and a teaspoon of ghee or butter near the end adds a silky finish.
