Cake Spice Mix (केक स्पाईस मिक्स) is a warm baking spice blend for fruit cakes, Christmas rum cake and other festive bakes. It is described as a blend of cinnamon, nutmeg, cloves and cardamom; the label reads "Cinnamon, Cloves, Blackpepper, Nutmeg etc." The spices are balanced for warmth and sweetness and add a fragrant aroma to rich, moist cakes. The mix is made from 100% natural spices, free from preservatives and fillers, and the pack is marked VEG. Its signature use is a Christmas rum cake: 1 ½ teaspoons of the mix are sifted with 2 cups all-purpose flour, 1 teaspoon baking powder and ½ teaspoon baking soda, then combined with butter, brown sugar, 3 eggs, vanilla, orange juice and zest, plus raisins, currants, apricots, cranberries, walnuts, almonds and cashews soaked overnight in ½ cup dark rum. It bakes at 325°F (160°C) in a 9-inch pan for 60-70 minutes. Orange or apple juice replaces the rum for an alcohol-free version, and the finished cake suits Christmas celebrations or gifting.
