Bharwa Masala (भरवा मसाला) is a spice blend for Indian stuffed recipes: stuffed bitter gourd (karela), eggplant and okra, aloo or paneer parathas, stuffed chicken breasts or lamb, samosas and rolls, and earthy, spicy gravies. It is described as a blend of fennel, coriander, cumin and a hint of asafoetida; the label lists "Chilli, Coriander, Cumin, Stoneflower, Asafoetida etc." The spices are non-oil-extracted to keep their full-bodied flavour and fragrance, so less masala is needed per use, and the blend is 100% natural, free from artificial additives, colours and preservatives. The pack is marked VEG. For stuffed eggplant, 3-4 tablespoons are mixed with salt and optional gram flour into a thick paste, filled into 500g of slit baby eggplants and cooked covered on a low flame in 2 tablespoons oil for about 15-20 minutes. A non-stick or cast-iron pan with a tight-fitting lid keeps stuffed vegetables from sticking. Stored airtight in a cool, dry place away from sunlight, use it within 6 months; the pack reads best before 6 months and asks to refrigerate after opening. It comes in a white stand-up pouch with a deep red base, printed "Product of India".
