Ghee Cheeni (Sugar) Gajak is a ghee and sugar gajak made as pale cream, rolled oval slices with a centre of chopped nuts, including green pistachio pieces. Each piece has a fine, grainy texture around the nut filling. Also called ghee gajak and special gajak, it is a seasonal sweet for winter munchies, sliced to arrange on a serving plate for the table.
