Mustard (Rai Small) is small whole mustard seed for tempering (chaunk), packed in 200 gms. The tiny, round seeds are dark reddish-brown. They come from chemical-free mustard plants, and their essential oil gives mustard its recognizable aroma and pungency. In India the seeds are indispensable in upuma, sambar, rasam, chutney and rice; elsewhere they flavour dressings, glazes, sauces, soups, pickles, sandwiches and salads, and pair well with meats and cheeses. Mustard seeds supply dietary fibre, selenium and magnesium. They improve digestion, have anti-inflammatory effects, help reduce the severity of asthma attacks and certain symptoms of rheumatoid arthritis, and help lower blood pressure, menopause pain and migraine. The Romans were the first to understand mustard's value and later exported it to Paris. Genus Brassica, family Brassicaceae. Catalogue code: SIR10005
